Aztec Cookies - As Seen on The Great British Bake Off

Ingredients:
95g salted butter, diced
210g good quality dark chocolate
195g caster sugar
3 eggs
1 1/2 tsp vanilla extract
270g plain flour, sifted
1 1/2 tsp baking powder
150g white chocolate, broken into pieces

Weighting scales
Baking trays
Baking parchment
Wire rack/heatproof cutting board

Step-by-step method

.1. Melt the butter and chocolate in a saucepan on a medium heat until fully melted and combined

2. Combine the sugar, eggs and vanilla in a large mixing bowl with a spoon.

3. Once the chocolate mixture has cooled, pour it into the mixing bowl. Mix well, until a shiny, smooth consistency is reached.

4. Add the flour and baking powder into the mixing bowl and stir gently until combined.

5. Stir in the pieces of broken-up white chocolate so they are well distributed.

6. Heat the oven to 190 degrees, 180 for fan ovens

7. Set the mixing bowl aside for 10-15 minutes for the mixture to firm up

8. Line 2-3 baking trays with baking paper and start spooning the mixture onto the trays - approximately 1 tbsp per cookie.

9. Once the mixture is used up, place the baking trays in the oven for 12-15 minutes, until the cookies are only just firm.

10. Leave the trays on a heatproof surface until cool. Then, enjoy!
