Victoria Sponge cake recipe

Cake Time!
There's a recipe that has gone down the generations of how to make the best cake. The secret is in the effort you put in to making it. The key to making a great cake is making it with love- as Evie once said do not put olive oil in the cake. She sure does love her cake.
1) Firstly you get your equipment and ingredients:
Equipment
· bowl
· spoon
· whisk
· scales
· knife
· cake tin
· sieve
Ingredients
· 250g butter
· 250g sugar
· 2 eggs
· 250g flour
· 1 tsp vanilla
· 3 tbsp. milk
· Grease proof paper
· A dusting of icing sugar for the top
· Strawberry jam
· 3 sliced strawberries
Method
Step 1
Place your butter and sugar into your bowl and whisk until they become light and fluffy.
Step 2
Mix the vanilla into your butter and sugar and then add the eggs 1 by one until fully incorporated. For example, take a mug and bonk the side of egg into mug. Check for pesky shells - or add a little crunch! then pour the egg from mug into butter and sugar and vanilla. Mix it altogether and crack another egg. You should now how to do this.
Step 3
Sift in the flour bit by bit and combine until it resembles a batter like consistency.
Step 4
Add the milk in a tbsp. at a time you don't need to add it all only enough until the batter can fall off the whisk in a v shape.
Step 5
Grease the cake tin with butter then line it with baking parchment.
Step 6
Place the batter into the tin and transfer to the oven at 180 degrees Celsius for 30 minutes or until a skewer comes out clean when stuck into the middle of the cake.
Step 7
After you have left the cake to fully cool cut it in half to make 2 slices.
Step 8
Fill the inside of the cake with strawberry jam and place the top slice of the cake back on top.
Step 9
Finally dust the top of the cake with icing sugar and place sliced strawberries on top and serve. Yummy
